The salty lemons in chermoula point to its origins as a preserve but today it is used as marinade and to start or finish a stew or soup. There is a famous dish in Morocco “twejeen m'charml” which literally means “chermoulised”.

George's Moroccan Chermoula Chicken Tagine
8 skinless, boneless chicken thighs
1 large chopped onion
400g carrot batons
60g chermoula paste
Add oil to a large pan and lightly brown the chicken and onions. Add 200ml water, the chermoula and carrots. Stir and simmer for 30 minutes. Serve on a bed of couscous or rice.
