Opis

Tapioca Flour, also known as tapioca starch, is ground to a powdery fine granulation from the dried roots of the cassava plant. It is a starchy and slightly sweet flour that is especially good for thickening soups, sauces, dips, pie fillings and puddings. Tapioca Flour is also an excellent ingredient for gluten-free baking, as it lends a springy texture, promotes browning and makes crispy crusts.

Garbanzo & Rice Bread
Liquid Ingredients
3 Eggs, lightly beaten
1 tsp Cider Vinegar
45 ml Olive Oil
300 ml Water
1/4 tsp Gluten-free Maple Flavoring Extract, optional

Dry Ingredients
120 g Garbanzo Bean Flour
160 g Brown or White Rice Flour
60 g Bob's Red Mill Tapioca Flour
65 g Cornstarch
4 tsp Xanthan Gum
40 g Brown Sugar
1 1/2 tsp Salt
1 Tbsp Egg Replacer, optional
55 g Dry Milk
2 1/4 tsp Active Dry Yeast

Combine liquid ingredients; pour carefully into baking pan. Measure dry ingredients; mix well to blend. Add to baking pan. Carefully seat pan in breadmaker.
Select Normal cycle; start machine. After mixing action begins, help any unmixed ingredients into the dough with a rubber spatula, keeping to edges and top of batter to prevent interference with the paddle. Remove pan from the machine when bake cycle is complete. Invert pan and shake gently to remove bread. Cool upright on a rack before slicing.
