Cream of tartar is best known in our kitchens for helping stabilize and give more volume to beaten egg whites. It is the acidic ingredient in some brands of baking powder. It is also used to produce a creamier texture in sugary desserts such as candy and frosting, because it inhibits the formation of crystals.

Prepare & Use

When combined with bicarbonate of soda, cream of tartar makes a raising agent to use when baking scones, drop scones and cakes. Make a simple baking powder by combining 1 tsp bicarbonate of soda with 2 tsp cream of tartar. Cream of tartar is also added to icing to give a creamy texture, or to egg whites to increase the volume of beaten egg whites when making meringues and pavlovas.
