50g Nestlé® Go Free® Honey Flakes
125g Plain Gluten Free Flour
1 tsp Baking Powder
100g Butter, Softened
100g Caster Sugar
1 Large Egg
1 tsp Lemon Juice
60ml Milk
150g Blueberries
Instructions
Preheat oven to 180C, 350F. Line muffin tin with paper cases. Mix together flour and baking powder. In another mixing bowl, combine butter and sugar. Beat on medium-low speed until creamy, then add the egg and mix until combined. Add dry ingredients and mix on low speed. Mix until thick. Stop the mixer and add milk and lemon juice. Mix until a thick batter forms. Gently fold in blueberries and half of the Nestlé® Go Free® Honey Flakes with a spatula. Spoon batter into paper cases. Fill each cavity about 2/3 full. Top each muffin with the remaining Nestlé® Go Free® Honey Flakes. Bake for about 25 minutes, or until a cake skewer placed into the muffin comes out clean. Allow muffins to cool on a wire rack.
