Preparation and Usage
Chocolate brownies
Makes 9
100g Melted un-salted butter
90ml Cold water
8" Square tin (or 7" round cake tin), lined with baking parchment.
Serving
Serve with a big scoop of vanilla ice-cream.
Cooking guidelines
Electric 180°C, Fan 160°C, Gas 4, 30-35 mins
To make the brownies: Add the melted butter and chocolate chunks to a non-metallic microwaveable bowl. Cover loosely with cling film and heat in the microwave on medium power for 2 mins. In another bowl, empty the contents of the egg mix sachet. Add 90ml cold water and using an electric mixer, whisk for 3-4 mins (5-7 mins with a hand whisk). Stir the chocolate and melted butter and add to the whisked egg mixture and fold through. Add the contents of the flour and cocoa mix sachet and again, gently fold through until combined. Pour the mixture into the prepared tin and bake for 30-35 mins. The brownies should be slightly springy on the outside but still soft in the middle. Leave to cool completely before cutting and serving.
