How to make the perfect infusion:
Use freshly drawn water, as reboiled water dulls flavour and colour. Bring the water to the boil, then add to the infusion straight away. Brew for 5 mins before removing teabag. Best served without milk. Alternatively, to serve iced: Bring the water to the boil, then add to the infusion straight away. Use two teabags per person, half fill the cup and brew for 10 mins. Remove teabags, allow to cool and top with ice and a slice of lime.
