How to make the perfect cup of chai:
For traditional brewing, use one teabag per person and add to a pan of milk. Bring to the boil and allow to simmer for 5 mins, adding sugar to taste.
Alternatively use freshly drawn water, as reboiled water dulls flavour and colour. Bring the water to the boil, then add to the tea straight away (using one bag per person). Brew for 3-5 mins, remove the teabag, then add milk if desired.
